Medieval soup challenge: Malbork Castle’s chef reveals how the Teutonic Knight’s inspired it all

Bogdan Galazka, chef at the Gothic Café, a restaurant located inside Malbork Castle, explains how a rare find in the Teutonic Order’s medieval records inspired a cookbook and changed the way he thinks about food. Bogdan Galazka dreamed up special dishes for Writer Nicole Tomlinson every day while she and the rest of the crew were at the castle filming for the Battle Castle series. He also gave her a very special cookbook called “The Cuisine of the Teutonic Grand Masters in Malbork Castle”, which contained a recipe for cherry soup that inspired her to go on a mission to cook medieval soups and share the recipes.

Medieval soup challenge: Writer Nicole Tomlinson goes “strawberries” over Malbork’s pierogies

Writer Nicole Tomlinson details a strawberry pierogi dish made especially for her at Malbork Castle in Poland during the filming of the Battle Castle action documentary series. Bogdan Gatazka, chef at the Gothic Cafe, a restaurant located inside the castle, dreamed up special dishes for Tomlinson every day to accommodate her vegetarian diet and gave her a cookbook called “The Cuisine of the Teutonic Grand Masters in Malbork Castle”, which contained a recipe for cherry soup that inspired her to go on a mission to cook medieval soups and share the recipes.

Bogdan Gatazka, chef at the Gothic Café, failed to find his “chef’s hat” before Writer Nicole Tomlinson interviewed him. But just as the chat begins, a waiter comes through. Gatazka dreamed up special dishes for Tomlinson every day while she and the rest of the crew were at the castle filming for the Battle Castle series. He also gave her a cookbook called “The Cuisine of the Teutonic Grand Masters in Malbork Castle”, which contained a recipe for cherry soup that inspired her to go on a mission to cook medieval soups and share the recipes.

BattleCastle.TV: host Dan Snow shares the mystery behind Conwy’s master builder

Battle Castle host Dan Snow reveals how Conwy’s architecture helped identify the mastermind behind its design. Master James of St. George and his castle builders also raised Caernarfon, Harlech and Beaumaris — combined, these fortifications are known as the Iron Ring. Conwy was commissioned by King Edward I in Snowdonia, Wales, and was tested with Madog ap Llywelyn led a medieval rebellion against the English and their Iron Ring of fortifications in the late 13th century. The secrets of this mighty castle’s build and details of the siege it faced are revealed in Battle Castle: Conwy.

Battle Castle:  Malbork — exploring the castle

Writer Nicole Tomlinson and the rest of the Battle Castle crew, including host Dan Snow, explore an area of Malbork Castle in Poland that’s normally out of bounds to the public. Battle Castle: Malbork profiles the siege of 1410 when Polish and Lithuanian forces attacked the brick stronghold. The offensive, which was led by King Jagiello and Grand Duke Vytautas, occurred after the Battle of Tannenberg. The castle, historically known as Marienburg, was built by the Teutonic Order, crusader knights who occupied this area of the Baltic in medieval times.

Battle Castle: Gaillard – surrounding lands

Photos of the area surrounding Chateau Gaillard, including the River Seine and the town of Petit Andely, taken during the filming of Battle Castle: Gaillard with host Dan Snow. The French army, led by Philip Augustus of France, laid siege to English King Richard I’s stronghold in 1203-1204. The show reveals how Richard the Lionheart’s castle builders constructed the fortifications and details the medieval weapons used to attack it.

Shooting a 3D documentary: Ian leaving for Salvador, Brazil

It’s go time. I’ve been running around the last few days getting everything organized so I can join the crew to shoot our first 3D documentary.

I leave for Salvador, Brazil tomorrow to capture Blowdown in 3D – the prep and implosion of the Fonte Nova Stadium to make way for a new facility for the 2014 World Cup.

The Parallax Film team’s been down there for a week now. They’ve set up our HQ and shot some material – enough to get their feet dusty.

The next few weeks leading up to the August 29 implosion will be a great field experiment.

As the demolition story unfolds, so will the nuances of the equipment we’ve rigged to capture the first implosion ever shot in 3D.

I know what it will be like down there – field realities will set in, and days will be overflowing.

So writer Nicole Tomlinson will manage the blog in my stead.

I’ll feed her shoot info whenever I can as we review story material, and she’ll post here.

Ciao for now.
